Already some of my favorite vegetables are arugula and brussels sprouts, but when you add balsalmic vinegar and maple syrup to them, they are BOMB!
Please try this recipe I found via Foodgawker and Love & Lemons! You can add whatever veggies in addition to the original recipe (I added mushrooms).
This make one Entree serving:
A big handful of arugula
a small handful of dried cranberries (optional or use nuts! - pinenuts would be awesome)
3/4 cup brussels sprouts (cut in half)
1/2 bunch broccolini (cut in florets & use the stems for garlic stir fry later!)
1.5 - 2 Tbsp olive oil
1 Tbsp balsalmic vinegar
1 Tbsp pure maple syrup
1 tsp sea salt
a couple turns of the pepper mill
Preheat oven to 375.
Toss the first two ingredients in a salad bowl - they will be waiting for the delicious warm, sweet veggies to join later.
Toss the rest of the ingredients together in a big bowl. I baked the brussel sprouts for 15 minutes before adding the broccolini (10 minutes). Then I added the mushrooms for about 5 minutes after that.
Not the greatest picture, but look at all those greens!
Now what I need are some big, cutsie salad bowls! AKA not a pyrex mixing bowl.
